Another option is to install trim level then insert a filler between the ceiling and trim to fill the gap. Install the crown with the bottom edge on the 1 inch line on the cabinets and the crown will be snug to the ceiling at both ends. Mark the location of each uneven area with a pencil so that you can easily identify your problem areas. Move along the ceiling with your level until you find an uneven area.
